The necessity to change our diet and the entire agricultural system has been a topic of discussion for some time. Any significant changes are still to be seen, but something’s cooking downstream, and it smells delicious… Pulitzer Prize winner Benoît Bringer provides examples of initiatives from various countries showing that the change of diet is possible not only for an individual but also for a school or an entire school system. With the support of Jane Goodall and other scientists, he points out the benefits of organic agriculture and offers seemingly simple solutions to the most pressing issues concerning food that both conserve natural resources and taste like something straight out of a Michelin restaurant.
